The black and white go perfectly with the Zebra cuppycake wrap... I love it.. I wish I knew the flavor of the icing, chocolate? Maybe Chocolate Mint? Oh I hope it's mint!

Anyone ever heard of a little book called "Why French Women Don't Get Fat"? Probably one of the most insightful books I have ever read. Mainly, it's about eating well, and eating smart. Nothing too new, but I did come across this article today which adds to that notion. Try it out, see how it goes and let me know if it works for you!

Before Eating, Divide The Plate
Here’s a simple rule to portion a plate properly: Divide it in half. Automatically fill one side with fruits or vegetables, leaving the rest for equal parts protein and starch. This way, you begin to see what a properly balanced meal looks like. Spaghetti and meatballs? Steak and potatoes? They’re only half a meal, incomplete without fruits and vegetables.
Pre-Portion Tempting Treats
The bigger the package, the more food you’ll pour out of it. When two groups were given half- or 1-pound bags of M&Ms to eat while watching TV, those given the 1-pound bag ate nearly twice as much.
Head Off The Mindless Munch
Five minutes after eating at an Italian restaurant, 31 percent of people couldn’t remember how much bread they ate. If you’re worried you might do the same, have the bread removed from the table.
Downsize The Dishes
If you’re one of the 54 percent of Americans who eat until their plates are clean, make sure those plates are modestly sized. On a standard 8- to 10-inch dinner plate, a portion of spaghetti looks like a meal. On a 12- to 14-inch dinner plate, it looks meager, so you’re likely to dish out a bigger portion to fill the plate. When researchers gave study participants 34- or 17-ounce bowls and told them to help themselves to ice cream, those with the bigger bowls dished out 31 percent more ice cream.
Limit Your Choices
The more options you have, the more you want to try. In one study, researchers gave two groups jellybeans to snack on while they watched a movie. One group got six colors, neatly divided into compartments; jellybeans for the other group were jumbled together. Those given a mix ate nearly two times more. Use Your Power For Good
Most homes have a “nutritional gatekeeper” who controls 72 percent of the food eaten by everyone else. The person who chooses food, buys it, and prepares it wields power. If that’s you, take advantage of it.
Avoid A See-Food Diet
Office workers who kept candy in clear dishes on their desks dipped in for a sample 71 percent more often than those who kept their candy out of sight.
Turn Off The Television
The Vast Wasteland leads to vast waists. It’s not just the couch-sitting. TV distracts you from how much you’re eating, and the more you watch, the more you’re likely to eat. In a study comparing how much popcorn viewers ate during either a half-hour show or an hour-long show, those who watched more television ate 28 percent more popcorn.
Think Before You Drink
Pour cranberry juice into two glasses of equal volume: one short and wide, the other tall and thin. Most people pour 19 percent more cranberry juice in the short glass because the eye is a poor judge of volume in relation to height and width.
Serve Good-For-You Foods Family-Style
Not all portion-control strategies are about eating less. You can have as much as you want of some foods. Place the foods you want your family to eat more of―salads and vegetable sides―within easy reach on the dining table. In a soon-to-be-published study, Wansink found people who kept baby carrots in plain sight ate 25 percent more during a day.

I love peanut butter and chocolate... It's better than anything... Almost better than Bailey. So when I came across this recipe, I had to share it!

Easy Peanut Butter Cups

From Everyday Food
Ingredients
4 ounces white chocolate, chopped

1/2 cup smooth peanut butter

12 ounces semisweet or bittersweet chocolate, chopped

2 tablespoons unsalted roasted peanuts, chopped

Directions:

Line two 12-cup mini muffin pans with paper liners; set aside.
In a microwave-safe bowl, combine white chocolate and peanut butter. Microwave, until almost melted, 1 to 1 1/2 minutes, stirring halfway through. Set aside to cool slightly.
Meanwhile, place semisweet chocolate in another microwave-safe bowl. Microwave, stirring once or twice, until almost melted, 2 to 3 minutes.
Dividing evenly, use a spoon to layer semisweet chocolate and peanut-butter mixture into liners, beginning and ending with chocolate; sprinkle with peanuts.
Place muffin pans in freezer until peanut butter cups are firm, about 15 minutes. Bring to room temperature before serving.
Makes 24.

Sooo, this was my Valentine's Day 2009 Layout!

I made the best German Chocolate Cake, in the shape of a heart of course! Want the recipe?

4 ounces sweet dark chocolate (see Shopping Hint below)
1 cup (2 sticks) butter, at room temperature
1/4 cup warm milk
2 1/2 cups sifted cake flour
1 teaspoon baking soda
1/2 teaspoon salt
5 medium egg whites
2 cups sugar
5 medium egg yolks, at room temperature
1 teaspoon vanilla extract
3/4 cup buttermilk, well shaken
For the coconut frosting:
1 cup sugar
4 medium egg yolks
1 cup evaporated milk
1/2 cup (1 stick) butter
1 teaspoon vanilla extract
10 ounces fresh or frozen and thawed grated coconut
1 1/2 cups finely ground pecans, walnuts, or almonds
1/4 cup warm milk

Yields: 12 servings

Preparation
Prepare the chocolate by melting it in the top of a double boiler, stirring until it is smooth. Add 1/4 cup (1/2 stick) of the butter and stir until it is melted and blended. Add 1/4 cup of warm milk and stir until smooth. Set the chocolate aside to cool.

Preheat the oven to 350ºF.

Line the bottoms only of three 9-inch cake pans with circles of parchment paper, or grease each pan bottom only with solid shortening and dust lightly with flour. Sift together the sifted and measured flour, baking soda, and salt.

Whip the egg whites until stiff using the wire beater of the mixer. Transfer the beaten whites to a separate bowl and set aside.

In the mixer bowl, cream the remaining 1 1/2 sticks of butter and sugar together until fluffy.

Add the egg yolks one at a time, beating well after each addition. Add the melted, cooled chocolate and the vanilla. Mix well.

With the mixer on very low, stir in the flour mixture alternately with the buttermilk. Do this by adding about a third of the flour and slowly stirring it in completely. Then add about half the buttermilk and stir it in. Continue adding flour and buttermilk in this manner, ending with flour. Scrape the sides and bottom of the bowl and stir again. With a long-handled spoon or spatula, fold and stir the beaten egg whites into the batter until the batter is smooth with no visible clumps of whites.

Divide the batter evenly between the prepared pans and bake for 30-40 minutes. Bake on the middle rack of the oven, allowing at least 1/4-inch clearance between the pans and the oven walls. The cake will rise above the pan edges as it bakes but will not spill over and will settle back down as it continues to bake. The cake is done when it begins to pull away from the sides of the pans and springs back to a light touch. Cool layers in the pans for about 8 minutes.

Run a knife around the edges of each pan and turn the layers out onto wire racks that have been sprayed with cooking spray. Cool layers completely before frosting.

To make the frosting, combine the sugar, egg yolks, and evaporated milk in the top of a double boiler. Stir with a wire whisk until the yolks are fully incorporated. Add the butter. Place over simmering water and bring to a boil (see Note below). Simmer for 12-15 minutes longer, stirring constantly, until the mixture thickens. Add the vanilla, coconut, and nuts. Cool.

To assemble the cake, place one layer on a cake stand and spread with frosting. Frost each layer completely, top and sides, as it is added to the cake.

Note: You can also make the frosting in a regular saucepan, but be sure to stir it constantly, as it scorches quite easily. Also, you must use the finely grated fresh or frozen coconut, not canned or shredded, to be able to spread the frosting on the sides of the cake easily.

Why couldn't my parents be this cool... I would get cupcakes on my birthday and that was it! They had this belief that cupcakes make a kid a hyper... Which maybe in my case was true. Or maybe I had A.D.D... Who knows. I do remember one particular Slurpee that had me bouncing off the walls. My mommy let me get it, only because she was leaving and my daddy had to take over for the night. I'm pretty sure she was mad at him... That's good revenege, I shall try that one day with my own kids.

Moving on. Suri Cruise. CUTE and a Cupcake lover. Along with her Juicy Couture Dress and little Mary Janes, the girl has style and taste. This little girl is going to be the talk of town for years to come, and she only helps to make little cupcakes way more popular!

HINT... hint hint hint...

Recently, I've learned that hints don't work. I'm not sure why that is though... I can hint to my girlfriends all day, and they completely get it. I don't even so much as have to speak a word, just a look or a nudge and it's like they've just read my mind. Guys on the other hand, I don't understand how you can't do that! Sometimes being blunt is rude, so girls hint things. Hints that are so obvious you should pick up on it, but don't.

Case in point, the Ring on the Tiffany Blue Cupcake. I wonder what that could mean...

SET UP THE CHRISTMAS TREE!!!

So in honor of that loveliness here are some pretty Ornament Cupcakes, with the "How To" Courtesy of Star Telegram:

Edible Ornaments
Makes 24 cupcakes
24 vanilla cupcakes in assorted green, red and white paper liners
2 cans (12 ounces each) vanilla frosting
1/2 cup each green, light green, red, yellow and white decorating sugars
24 yellow spice drops
Black licorice laces, cut into 24 (1 1/4 -inch) pieces
24 thin pretzel sticks
Assorted colored fruit chews and leathers, such as Laffy Taffy, Airheads, Starbursts
Red licorice laces
1 cup M&M Minis
Cinnamon Red Hots
1. Spoon 1/2 cup vanilla frosting into a self-closing plastic bag, pressing out excess air; seal and set aside.
2. Place decorating sugars in separate small shallow bowls.
3. Spread tops of all cupcakes in remaining vanilla frosting, mounting it slightly. Roll top of each cupcake in one of the sugars to coat completely.
4. Make top of ornament by poking a hole in each end of each spice drop with a round toothpick. Bend one black licorice piece in half and insert both ends into one of the spice drop holes to make a loop. Insert one end of a pretzel stick in the hole in the other end of the spice drop. Press the other end of the pretzel stick all the way into a cupcake. Repeat with remaining cupcakes.
5. Roll out fruit chews on a piece of wax paper to 1/8 -inch thickness. Use clean scissors to cut the fruit chews and leathers into decorative pieces. Arrange these with red licorice laces to make strips, bands and other designs on the cupcakes.
6. Snip a tiny corner off the bag with vanilla frosting and pipe dots in different patterns over the cupcakes, atop the fruit chew designs. Press M&M Minis and Red Hots into frosting. Place cupcakes into small boxes or arrange on a platter.

I am sitting in my car behind 1st Constitution Bank in Plainsboro, pondering the next step in a daring daylight heist.
The loot is spread across the passenger seat -- two boxes and two bags of unmarked, untouched goods.
Cupcakes, mostly, with a dozen cookies and muffins scattered throughout.
The big question: How much of the merchandise do I sample right now, and how much do I take back to the office?
This, I tell myself, is no time to suddenly develop a conscience. I have a job to do, and besides, I am hungry.
The baked goods are from Sugar + Sunshine in Plainsboro, and they're so good I immediately hate owner Gigi Burton. Why? When I lived in Plainsboro eons ago, there was no bakery like this -- or much of a town, for that matter.
We're several years into the "Sex and the City"-fueled cupcake craze -- one trend I really wanted to avoid -- but Burton's cupcakes, and the rest of her baked goods, are first-rate, and Dec. 15 is National Cupcake Day, after all.
"We wanted to focus on nostalgic American desserts," Burton said. "We didn't want to do these fancy little French pastries."
For 12 years, Burton worked in the credit card division at J.P. Morgan. But baking was always on her mind, and when her job was transferred to Delaware in the wake of J.P. Morgan's merger with Chase, Burton took it as a sign to get out of the office and into the kitchen. The bakery opened in April, and Burton's commute is painless -- she lives in town.
Supermarket cupcakes, even the bakery cupcakes I've sampled, are no match for the cupcakes at Sugar + Sunshine. The icing, a thick swirl of rich buttery goodness, emboldens but doesn't overwhelm the soft cake. In fact, all her baked goods have great texture; the banana nut muffin, with a flaky, sugary crust, is just about perfect. The chocolate chip cookie tastes like home; the chocolate brownie tastes like real chocolate. The oatmeal raisin cookie may have been my single favorite item. The sole disappointment: the blueberry muffin, which tasted more like lemon than blueberry.
"Everyone wanted to sell us pre-made pie filling, pre-made everything," Burton said. "We could buy tons of frosting, but then we'd be just like the supermarket. Our suppliers said, 'You're never going to make it.'"
She seems to be doing quite well, thank you. There are a dozen or so cupcakes, from chocolate/chocolate (double yum) and vanilla/chocolate to carrot/cream cheese, strawberry/strawberry buttercream and coconut/lemon buttercream. The frosting is done out front, so if you want to create your own combination and there's cake available, you can.
Cupcakes are $2 each or $20 per dozen. Cookies are $2 each; brownies $2.50 each. Cakes and pies are made to order. Cinnamon rolls, $2 each, are available Thursdays through Sundays only.
In the end, it was probably a good thing I brought my loot back to the office.
"I am going to walk away before I stick my face in that box," a colleague said.
"The most astounding cupcake I ever ate," raved another.
Some complained the cupcakes, from which I extracted small slices, weren't whole. "Hey," I replied, "I'm working here!"

Cupcake Camp?

Okay, I've been reading all about this Cupcake Camp I have to say, I'm intrigued, and depressed that I don't live in the San Fran area... However, if you do, please feel free to partake. Click the link and go!

I really hope that the day after they have Cupcake Camp they have Boot Camp, so people can work off the 15 cupcakes they ate the day before. I'd be completely ready for that... I wonder how many miles you have to run to burn off one cupcake. My guess is 2-4, depends on the size and amount of frosting. A CRUMBS cupcake is probably closer to 4 miles. Who cares, Cupcakes are one of the best things on EARTH, enjoy 1, or 10. Worry about running when you're dead.

Santa is real

He's real to me at least... And look, here he is on a red cupcake! He's everywhere! He watches me everyday to make sure I stay on the Nice list. How many of you are on the Naughty list this year? I know I've been very good... And instead of cookies and milk, Santa is getting cupcakes in Milk. I'm sure that'll please him more than a batch of Oreos! Who am I kidding... My dad won't stop at the Cupcakes on the plate he'll head to the fridge and eat the whole batch afterwards. Very Un-Santa like behavior, but I guess he's no longer participating in that charade for my benefit anymore.

Pretty Pretty! The snows is pretty, the tree is pretty, and the cuppy liners are the the prettiest! I love how classy Christmas stuff can look!

We have a fake tree... just like this one, but probably bigger. Every Christmas, I get to set it up. Then I get little green slivers stuck in my skin... My dad sits on the couch and usually talks on the phone... Then I get mad, and call him a scrooge. He usually helps after that. Good Story huh.

PRESENTS!!!!!!!!!

I'm the kid who refused to go to bed because I was to excited to open my Christmas presents. Eventually, I passed out, and I had to be carried to my bed. The day I found out that my dad was really Santa Claus, I nearly had a heart attack at the age of 6. I always found it odd that my dad and Santa had the same handwriting... And so did the Easter bunny... I put two and two together and realized I had been DUPED!

These are whole new kind of present... the cupcake kind. I'm excited to tell you that, I will be ordering cupcakes online, right before Christmas, as a present to myself. Not only will it be Christmas, but I will be 5 lbs lighter. That's my goal at least... Then I'll gain all 5 back, but who cares!

Seriously, you can almost tell that this cupcake is going to melt in your mouth! It's also got me wondering how they get that pretty pinkness in the middle. Hmm... I may need to experiment with that! I've seen ones where they cut the cupcake in half, and then put the yumminess on, and then put the cupcake back together, but this looks way to dainty to have been done that way... Any ideas?!

After reading this small little "Wiki Answers" blurb I considered seriously about changing the name of my blog. Who ever wrote this obviously must not be an English major based on the missing H, in the word with... Secondly, never once have I heard cupcakin used in any type of phrase like this... WHO TALKS LIKE THAT??

My main motivation for the name is: all out laziness. Instead of texting people back with "I am sitting in my Kitchen baking Cupcakes" when they asked what I was doing, I'd simply put "Cupcakin". It's a noun, and it's my own word, and if it gets submitted to Websters I want credit!!! At least mine is logical...

Please people, use spell check, and don't go back to 1995 and use the word wit, or hella for that matter!

Enough with my rant. I'm going to go start my own Wiki page now. So, take that!

Excerpts from a Cat’s Diary:

Day 983 of my captivity. My captors continue to taunt me with bizarre little dangling objects.

They dine lavishly on fresh meat, while the other inmates & I are fed hash or some sort of dry nuggets. Although I make my contempt for the rations perfectly clear, I nevertheless must eat something in order to keep up my strength. The only thing that keeps me going is my dream of escape. In an attempt to disgust them, I once again vomit on the carpet.

Today I decapitated a mouse and dropped its headless body at their feet. I had hoped this would strike fear into their hearts, since it clearly demonstrates what I am capable of. However, they merely made condescending comments about what a “good little hunter” I am. Sadistic fiends.

There was some sort of assembly of their accomplices tonight. I was placed in solitary confinement for the duration of the event. However, I could hear the noises and smell the food. I overheard that my confinement was due to the power of “allergies”. I must learn what this means and how to use it to my advantage.

Today I was almost successful in an attempt to assassinate one of my tormentors by weaving around his feet as he was walking. I must try this again tomorrow – but at the top of the stairs.

I am convinced that the other prisoners here are flunkies and snitches. The dog receives special privileges. He is regularly released – and is happy to return! He is obviously stupid. And the bird has got to be an informant. I observe him communicating with the guards regularly, surely reporting my every move. My captors have arranged protective custody for him in an elevated cell, so he is safe. For now…. ~Author unknown

Pilgrams.

So, for tomorrow I thought about dressing up as a Pilgrim. Wear my little suspenders, and those puffy pants, and a top hat. I'm much more into the boy Pilgrim style than the girls with the dresses and bonnets (people STILL wear that stuff, so I don't find it unique). Well my dad caught wind of my little plan, so I won't be dressed as a Pilgrim this year. It's too bad, because I was set to wear the outfit to the gym, church, and linner (lunch/dinner). Bailey was going to be the Indian too... BUT instead, I'll be wearing Jeans and UGGS. I'm pulling out the UGGS to spite my dad who thinks it stands for UGLY. I think it's his jealousy that he can't pull of a cute pair of shoes like a girl can, even if he's a "fashionisto".

My little blurb based on this one Cupcake. Not only is it cute, but it's inspiration for my stupid ideas! I wish I knew the flavor... it looks delightful!

Oh no they didn't! My cupcakes are better than your cupcakes!? Really!? You wanna fight about it...? Okay, granted, these cupcakes are pretty gorgeous, and there's a lot of frosting, and sprinkles, and over all they are perfect, I can't yet say they are better than mine. If you give me a free taste test, I'll be the judge of that. I'm wondering how long it took to make those trees. I'm thinking someone took several hours for one of those, and I have to give it up to them for their patiences and artwork skills!

How I would have loved to get these cupcakes when I was younger... Say Middle School... Then you hit college, and other than the finals part, it was awesome! Hang in there? No way, I'm tryin to prolong this phase for as long as possible. 5 years... Then I was forced to graduate because I apparently acheived a degree. Now I have a job, bills, and a dog that could eat me out of house and home. My cupcakes now read "You're life is 1/4 of the way over, Hang in there". Yeah, I'm thinking I'll live to about 100 or so.

Back to the cupcakes. I like the pretty colors. Pastels are always a plus in my book, and pink is the all time best color. Why don't more sports teams have PINK.

I'm going off on tagents today. Let's just go with it shall we?

I Heart, HEARTS

Being a girl, I was obviously raised on all things cute. Hearts are number 1 on my all time cuteness list. Anything with hearts will drag me right in, and i'll buy it, or eat, or do whatever it tells me too! So, I obviously took to this picture of a cupcake with heart sprinkles!!! Who wouldn't. It's cute and it looks amazing... I can't decide if it's edible or not, it looks too perfect!

On a side note, pertaining to hearts, I once painted my room hot pink (I'm talking BRIGHT pink), and then lined it with light pink (think pepto-bismol) hearts. I thought I was the coolest kid in the apartment... Too bad I wasn't a kid, I was 18, and my best friend thought I needed to tone it down a bit because it was a bit gawdy. Ha, what does she know! (I still love you Steph, and I will be burning that movie for you this evening)

Andes Mints are like heaven in a little green wrapper. I eat a box in 1 sitting... Then I look at the Calories/Fat Grams and I think about the miles upon miles I have to run to burn these little guys off! I see that there are 2 other cupcakes here, but I'm really only focused in on the green yummy grasshopper looking one...

Last year for Christmas I make these little chocolate cookies with melted Andes on top... Everyone LOVED them... Including myself, who probably ate about 15. If I find the recipe again I'll post it!

Each cupcake has it's own color, and it's own design! Pretty! I like the use of the sprinkles, and that there were probably 13 different bowls of frosting going so that every cupcake could be unique! My favorite... Top leftish with the Orange frosting and Pink Stars. If I was still 8 I'd paint my room in those colors. At 24, I guess it's frowned upon to have such colorful bedrooms.

Speaking of Sprinkles: TJ MAXX! I've never seen more Sprinkles in my life. Christmas Edition of course, but I bought some cute little snowflakes the other day, and a foursome of colorful Christmas Suagr Crystals too. Then I bought a Scarf, because once again I have a shopping addiction. We'll leave that one alone though.

Let the Games Begin!

So, I racked my brain for a week on what I could make for this competition, but also could double as my contribution to Thanksgiving this year. Obviously, since cranberry is the theme, and it's very traditional Thanksgiving food, anything I made would be sufficient... I figured I'd see a ton of Cran-Orange, Cran-Pear, Cran-Apple... etc. So, I decided to just stick with the one fruit and let it stand out in the recipe. Yellow cake just didn't seem to be the best choice, so I decided to make a white chocolate cake for that rich sweet taste which will offset any tart cranberries.

Mix. Mix. Mix.

Stir in the dried Cranberries. Yum.

The Naked Cupcake

Again, I apologize for the quality of my photos. I'm still working on that new camera! Over all, the cupcakes taste amazing. I couldn't wait to dig into this one when I was finished with it's photo shoot. I made my dad test it too, and he loved it! It was the perfect mix of sweet and tart in all aspects of it, from the cake to the frosting, to the cranberry drizzle. Try the recipes all together, or mix and match as they are all so universal in baking, and for Thanksgiving!!

The Recipes

White Chocolate Cranberry Cupcakes

8 ounces white chocolate, melted
2 1/4 cups all-purpose flour
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1 1/2 sticks (6 ounces) unsalted butter, softened
1 1/2 cups sugar
4 large eggs
1 teaspoon pure vanilla extract
1 1/4 cups milk
1 cup dried cranberries

What to do:

Preheat the oven to 350°. Line Cupcake pan with liners.

Sift together flour with the baking powder and salt.

Using a mixer, beat the butter and the sugar together until fluffy.

Add the eggs, 1 at a time, beating well after each addition.

Add the vanilla.

Alternately beat in the dry ingredients and the milk in 2 additions.

Add the slightly cooled melted white chocolate until mixed in.

Fold in dried cranberries until even distrubted.

Bake for 15-17 minutes or until lightly brown on top.

Let cool on baking rack.

White Chocolate Cream Cheese Frosting

1 package (8oz) cream cheese, softened

1/4 cup unsalted butter, @ room temperature

4 0z white chocolate, melted, slightly cooled

1 tsp. vanilla

2 1/2 cup powdered sugar

What to do:

Beat together Cream Cheese and Butter with an electric mixer until well mixed.

Add vanilla and melted white chocolate. Mix well.

Add powdered sugar gradually and mix well after each addition.

Place in fridge for 10 minutes.

You're ready to use!

Spiced Cranberry Sauce (Via Cooking Light Magazine)

1 (12-ounce) bag fresh cranberries
1 cup granulated sugar
1 cup water
1/4 teaspoon ground cinnamon
1/8 teaspoon ground ginger
Dash of ground nutmeg

Combine all ingredients in a medium saucepan; bring to a boil over medium-high heat. Reduce heat; simmer 10 minutes or until cranberries pop, stirring occasionally. Spoon into a bowl; cover and chill

I am so flipping excited for Civil War! My only problem is that I can't decide if I like the Ducks or the Beavers... My dad, an avid Duck fan/alum, and myself a Beaver Alum. Both teams are awesome this year, and I've watched as many of their games as possible, but again I'm still undecided. I'll root for both, if that's possible... Home team usually wins, which means the Beavers this year... But they broke that streak last year at Autzen when they beat the Ducks on their own turf!! I was there, and the stadium was SILENT... Last night we went to the Carrie Underwood concert in Portland. Let me just say, she is AMAZING. She's gorgeous, and she has this amazing singing voice that is better than CD quality. I love her! If she comes to your city, I seriously suggest you buy a ticket and see her live. It'll be one of the best concert of your life! I PROMISE!

He just topped my favorite Cupcake list. He's so adorable! His little Santa Hat and Big Ol' Belly! He's the perfect Polar bear!

Too bad I can't have a pet Polar Bear... Apparently, they get to big... Whatever that means. I'd buy him a barn, and a pool... He'd be a veggie eater too! If people can own tigers I see nothing wrong with me owning a Polar Bear!

For now, I settle on the Cupcake Version, and the fact that my dog is overweight enough to resemble a bear.

By far the best color is Pink... It's pretty, it's girlie, and boys even wear it now! My pink obsession has led me to posting this pretty little cupcake with pink liners, and pinkish orange frosting. Two for the price of one!

Okay, I have the Apple Crisps, and some Yellow Cupcakes I made just for fun. I know I promised them a week ago... but there they are finally!!

The stuff that makes it all... I used the green apples for that little bit of tart.. mmm

The love of my life Kitchen Aid mixer... Doing all the work for me... I remember what it was like before I had her... Horrible memories and arm cramps!!

The cupcakes after cooking the crunchy topping. I used a packet of Cinnamon Apple Oatmeal in the recipe. I think it made it a little sweeter, and the dried apples on top added to the flavor of the cupcake.

Here they are! The finished product!! I just made a simple frosting of Powdered Sugar and Milk to make the drizzle. Yummy, moist, and PERFECT.

And here are the simple yellow cake cupcakes... I made strawberry buttercream to go with it... Tried a little strawberry syrup on a couple and green and pink sprinkles on others.

The Recipes:

Dutch Apple CupCakes

2 cups all purpose flour

1 stick butter, softened

1 tsp. vanilla

1/2 cup sugar

2 eggs

1 tsp. baking powder

1/2 tsp. salt

3 Apples, Peeled and chopped

Crumb mixture:

1 1/2 cups brown sugar

3 Tbs. flour

2 tsp. cinnamon

1/4 cup butter, melted

1 Cup Rolled Oats

Preheat Oven - 350 Degrees
Cream together butter and sugar.

Add flour, baking powder and salt followed by eggs, vanilla and apples. Mix well.

To make crumb mixture, combine brown sugar, oats, flour, cinnamon and butter and mix well. Spoon cake batter into cupcake liners. Sprinkle on the crumb mixture. Bake 40-45 minutes.

Birthday Party Leftovers!

Well, these aren't really left overs, but more like perfect souvenirs for birthday parties. I can also see them used at weddings, or other events. It's perfect way to send your guest home, and to keep people like me from sticking my finger in the frosting "just to taste". Megan Hearts Baking

Recently, I was contacted by two aspiring authors who have written a book for young girls ages (5-9). I was lucky enough to be asked to review their book titled "Megan Hearts Baking". The book has a good message and a lot of heart, something I believe young girls need, especially at that age. In the book, Megan is invited to her best friend's birthday party. The invitation requires that the young girls bring their favorite dessert. Megan quickly thinks of cupcakes, but goes back to a memory in which she ruined a batch of cupcakes for her dad's birthday. She seeks help from her mother, and together they baked a new batch of cupcakes for the birthday party.

The book has several empowering messages, the most prominent is to never give up on something you love. I recommend it for all young girls, and even women my age can benefit from the heartfelt trials and tribulations Megan goes through.

The book is expected to be out November 30th.

Covered with 1/2 chocolate cream cheese and 1/2 peanut butter cream cheese (frosted like a B&W cookie). Surrounded by mini peanut butter chips." That's pretty much what it is, and it's AWESOME. My previous experience with Crumbs have just been ok, with some hits and some misses, but always a sweet frosting. I think the flavors worked out this time because I love peanut butter and a flavored frosting beats out a frosting that's just sweet."

Have you already seen this?? Because I haven't... I have to admit, I giggled. I think I've violated all of these!

Via The Washington Post:

"1. Learn to walk before you run. Perfect the classic vanilla and chocolate cakes with complementary frostings before you step up to other simple combinations, and long before you try something like Summer Peach Meringue Pie Cupcake. Actually, never try Summer Peach Meringue Pie Cupcake, which leads us to . . . .

2. Keep it simple. Cupcakes are eaten out of hand in five or six bites, so don't pack in too many components, or nothing will shine. Two components (cake plus frosting) are classic, but three (cake plus filling plus frosting or cake plus frosting plus topping) can work if each piece makes sense. More than that and you're tempting sensory overload.

3. Don't overbake. You need the right recipe and equipment, of course, but the most common baking mistake might be inaccurate timing. If you have cupcakes in the oven right now, go check them, because they're probably done -- or overdone. And nothing can fix that, not even a filling or a ton of frosting, which leads us to . . . .

4. Get the ratio right. If the cake is moist and tender and the frosting is not too sweet, the best proportion seems to be about two-thirds cake to one-third frosting. That gives you a generous dollop of frosting with each bite of cake, not the other way around.

5. Use good ingredients. The best thing about cupcakes is that they are homey. Artificial flavors are not homey, which leads us to . . . .

6. Respect your vanilla extract, and respect your chocolate. Vanilla is a flavor, not a synonym for "white." On the other side of the spectrum, people are very serious about chocolate, so if you promise it, you'd better deliver it, in a big way. A chocolate cupcake that doesn't taste deep, dark and rich is a bitter disappointment.

7. Beware the refrigerator. Of course it's easier to make a giant batch of cupcakes, frost them and put them in cold storage until serving. If there's butter or cream cheese in that frosting, it's dangerous to hold it at room temperature for more than a few hours. But cupcakes can dry out if left in the refrigerator too long, and they also can pick up flavors from other foods in there. Better to store unfrosted cupcakes at room temperature and then frost what you need as you go.

8. Use butter or cream cheese rather than vegetable shortening in the frosting. Shortening leaves a slick, flavorless mouth feel that seems to last forever -- definitely longer than it takes to eat the cupcake.

9. Watch the sweetness, especially in the frosting. You need sugar, and lots of it, for a classic cake frosting, but you also need balance, or the chocolate, vanilla, fruit or other flavor will just get lost.

10. Looks are important, of course, but don't go for overkill. Use sprinkles, sparkling sugar and other decorations carefully and in good taste. Remember to create something that showcases the flavors in an appealing (and, dare we suggest, obvious) way. And be careful about colors: Even if it's delicious, a spice cupcake with lime-green frosting is just wrong, very wrong. "

During all of this the team at 31 pounds worth of Cupcakes... Can you imagine that? All I can imagine is the treadmill and how many miles I'd be running to burn that off... Just thinking about eating that much makes me feel like I should head to the gym! Shameless Plug: Use the Nike+ system when you work out... It's amazing and it's helped me get my butt moving again!

I'm sorry, but there's nothing better than pumpkin recipes... especially in the fall time... I LOVE THEM... So in honor of Pumpkin I'm going to be posting a TON of recipes with Pumpkin in them... Yummyyy!

Today's Recipe is: Pumpkin Cheesecake!

We're mixing the classic cheesecake with a bit of pumpkin pie... The great taste of a pumpkin pie, but with that added rich, smooth texture only found in cheesecakes.

Let's Get Started:

Preheat the over to 350 degrees

Here's what you need for the Crust:
1 1/2 Cup graham cracker crumbs
(substitue 1/2 cup graham crackers for ground ginger cookies, for an added kick)
1 1/2 Tablespoons Sugar
5 tablespoons unsalted butter; melted

In a medium-large size bowl combine graham cracker crumbs, sugar, and butter. Once everything is well mixed, press the mix into the bottom of a greased 8 inch spring form pan. Cover and refrigerate for 30 minutes.

Here's what you need for the Cheesecake:
1/2 teaspoon ground cinnamon
1/4 teasppon ground ginger
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg
2/3 cup brown sugar
1/4 teaspoon salt
16 oz cream cheese - must be room temperature!
3 large eggs
1 1/2 teaspoons vanilla extract
1 cup pumpkin puree

In a small bowl combined dry ingredients. In a seperate bowl mix the cream cheese until smooth. Gradually add sugar/spice mixture and beat until smooth. Add eggs one at a time beating well after each. Add pumpkin and vanilla extract.

Pour Filling over crust. Bake cheesecake for 30 minutes and reduce temperate to 325 and continue to back for an additional 10-20 minutes.

Here's what you need for the topping:
1 cup Whipping Cream
3 tablespoons Sour Cream
3 tablespoons brown sugar
1 tablespoon Bourbon (I recommend the good stuff)

In a large bowl, whip cream, sour cream, and brown sugar until combined. Stir in bourbon, and whip until light peaks are formed.

The Election

With the Election only a few days a way, I have to say I'm excited to see it come to an end. Not only will I no longer have to see a political campaign ad 10 times during a TV show, but we can remove the Political signs from our front yards.
