Double the Cupcakes, Double the Giada!

Mascarpone Mini Cupcakes with Strawberry Glaze

After reading Cupcake Takes The Cake's post on Giada De Laurentiis' Halloween Cupcakes, it reminded me of her Episode on Tuesday in which she made Mascarpone Mini Cupcakes with Strawberry Glaze for a Bake Sale!

Not only will you get the video for the Halloween Cupcakes, but I'm going to give you the recipe for the Mascarpone Mini Cupcakes with Strawberry Glaze!

I'm a complete Giada fanatic! She's gorgeous, an amazing cook, has an excellent television program, and she just seems so nice! I record her show Everyday Italian almost everyday, and then I look for her other shows On Demand too. I've bought a couple of her books, and made several of her recipes which are all exquisite. So moral of the story: Giada if you're reading this, YOU'RE AWESOME!

Mascarpone Mini Cupcakes with Strawberry Glaze

Ingredients

8 ounces mascarpone cheese (about 1 cup), softened
2 egg whites
1/4 cup vegetable oil
1 box white cake mix
1 cup water
1/3 cup frozen strawberries, thawed and drained
2 1/2 cups powdered sugar

Directions

Special equipment: 4 mini muffin tins and 48 mini muffin paper cupcake liners
Preheat the oven to 350 degrees F. Line the mini tins with paper liners.
In a large bowl combine the mascarpone cheese, egg whites and vegetable oil. Using a hand mixer, beat the ingredients until combined and creamy. Add the cake mix and water and mix until smooth, about 3 minutes. Fill the mini cups to just below the rim and bake until puffed and golden, about 18 to 20 minutes. Remove from the oven, let cool slightly in the tin then transfer the cupcakes to a wire rack.

Meanwhile, puree the strawberries in a blender or small food processor. Place the powdered sugar in a medium bowl. Pour in the strawberry puree and whisk until smooth. Top the cooled cupcakes with the strawberry glaze. Let the cupcakes sit for a few minutes for the glaze to firm up, then serve.

Cupcake Costume!

Craft: Cupcake Costume for Halloween

How cute is that... Did you ever have a home made costume?? I did... I was a 70's girl with a Poodle Skirt and Roller Skates.. Contrasted with what I'm supposed to wear now, which is either a Sexy Kitten, or a Witch.... Fitting. Costumes aren't cheap though... Ebay is a great place to look, but making your own is just as nifty!

Recipe: Spiced Pumpkin Cupcakes

Makes: 36 Preparation time: 20 minutes Total time: 1 hour (plus decorating time) These cupcakes have a moist texture and warm spice They freeze well.

2 2/3 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
1 teaspoon salt
2/3 cup chopped walnuts
1 cup raisins
1 can (15 ounces) solid-packed pumpkin (about 1 3/4 cups)
1 cup granulated sugar
1 cup dark brown sugar
1 cup canola oil
4 eggs

Preheat oven to 350 degrees. Line 3 standard muffin tins with paper liners. In a large mixing bowl, sift together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves and salt. Add the walnuts and raisins and gently toss with the flour mixture. This will help prevent the nuts and raisins from sinking to the bottom.

In a separate large mixing bowl, whisk together the pumpkin, sugars and oil. Add the eggs one at a time, whisking well after each addition. Add the flour mixture in three batches, stirring with a wooden spoon just until combined.

Fill muffin cups about three-fourths full. Bake until the cupcakes are golden brown and a wooden pick inserted in the center comes out clean, about 20-25 minutes. Cool on a wire rack for 10 minutes, then remove cupcakes from pans and cool completely.
Frost and decorate.

Cook's note: If desired, substitute 1/2 teaspoon pumpkin pie spice for the nutmeg and cloves.

My First Post


Hi All,


I'm Ashley, and I'm in love with Cupcakes. Good introduction.


I've recently been excited about baking, cupcakes, and the cupcake places around where I live. Now, we only have a couple cupcake shops, so my choices are few and far between, so I've decided to make my own cupcakes, and open my own cupcake shop... Sorta like CRUMBS, but on a more hometown scale obviously!
Here's a picture of the batch I made tonight... Chocolate cupcake, Vanilla Buttercream, and some 1 dollar sprinkles they have at Target right now!
