Super Easy - Superbowl Food




I love peanut butter and chocolate... It's better than anything... Almost better than Bailey. So when I came across this recipe, I had to share it!



From Everyday Food
Ingredients
4 ounces white chocolate, chopped
1/2 cup smooth peanut butter
12 ounces semisweet or bittersweet chocolate, chopped
2 tablespoons unsalted roasted peanuts, chopped

Directions:

Line two 12-cup mini muffin pans with paper liners; set aside.
In a microwave-safe bowl, combine white chocolate and peanut butter. Microwave, until almost melted, 1 to 1 1/2 minutes, stirring halfway through. Set aside to cool slightly.
Meanwhile, place semisweet chocolate in another microwave-safe bowl. Microwave, stirring once or twice, until almost melted, 2 to 3 minutes.
Dividing evenly, use a spoon to layer semisweet chocolate and peanut-butter mixture into liners, beginning and ending with chocolate; sprinkle with peanuts.
Place muffin pans in freezer until peanut butter cups are firm, about 15 minutes. Bring to room temperature before serving.
Makes 24.

The Cupcake Tester – Got a new job


Yep! Matt got a new jobby! I’m pretty proud of him. I’m being assured that it won’t interfere with his cupcake tasting time, which I require of him. How exciting is that… I might have to buy him something pretty, or alcoholic. Or bake something cute in honor of his new found employment! I’m thinking Chocolate cupcakes, with Chocolate Fudge on top. Maybe a couple pretty sprinkles too… Those are his favorite ones.

P.S. I still need a new camera.

Mmm Perfection

So I think, by the response of most people, I’ve mastered the Chocolate cupcake… PERFECT…

Now for the buttercream. Seriously, I don’t know what I did so wrong with the hazelnut… Maybe I’m not mixing it enough… Maybe I need a new hand mixer… Oh how I can’t wait for my new Kitchen Aid Mixer to arrive on my front door. Life will be that much better when it’s in my cupcakin paws! Back to the buttercream… Anyone out there have ANY suggestions… I’m willing to take all advice. I’ve looked up and tried so many recipes. Maybe that’s the problem too… I should just wing it, and mix and match until I get something perfect. No more recipe following for me! That’s the goal tonight, perfect some Plain Ol Vanilla buttercream…

All of this will happen after I run of course. We’re going for 3 miles today… 4 if I have time. Followed by a dinner..

9.0.2.1.0 - & Cupckaes




Another great episode of 90210, followed by Privledged! Better be watching it!!



So tonight, the cupcakes.... Snickers and Almond Joys... PERFECT! Except I discovered I need to buy a new camera... The picture just don't do them justice... Sad I know!


I think I've perfected the chocolate cupcake. The Snickers Cupcakes were amazing... I used a Chocolate cupcake, put a mini size snickers in the middle, topped it with hazelnut buttercream, home made caramel and a piece of another snickers... Oh yeah, good stuff...


The Almond Joy was just as great! Chocolate Cupcake with a piece of an Almond Joy fun size and topped with coconut shavings!


Ahh... I love it! I'm bringing them to work tomorrow and I'm planning on having my co-workers eat them all up... So that I wont!!
